Dad's Pickled Mustard Tuber Scallion Oil Noodle

Ingredients: 

 

  1. Scallion (green onion)                                                       4-5 medium stalks
  2. Olive or canola oil                                                               3 Tbsp
  3. Chinese medium Yang-Chun noodle                            1 lb
  4. Ready to eat pickled mustard Tuber (榨菜)                   1 100g pack
Procedure: 

This is yet another regular item on our table that can be prepared quickly.  As you've already guessed, it's daddy's invention. Again, this noodle serves well either as lunch or dinner. We even brought it to a party once and people liked it.

  1. Wash scallions and cut off both ends. Cut into dices.
  2. Put scallion dices in a small sauce pan and heat in oil on high for 1-2 minutes or until scallion is soften but remain green. Stir to ensure all scallion dices are slightly cooked. Remove pan from heat.
  3. Boil water and cook noodle as instructed on package. For this dish we use the thinner kind of yang-Chun noodle but not the thinnest (cross section of the noodle is a square not rectangle). You can use any kind of noodle you like. In general, slightly thinner noodle goes better with this recipe as the flavor disperses into noodle more effectively. But the thinnest noodle is too un-chewy to our taste buds, so we use the medium thickness kind.
  4. When noodle is cooked, drain the water in the pot or take the noodle out into a big enough bowl for mixing with the rest of the ingredients. I am too lazy to wash one more dish, so I have been just draining out the water and plan to do the rest of the mixing right in the pot.
  5. You can start screaming for people to get ready to eat now as the rest will take just 2-3 minute.
  6. Pour the scallion oil and the whole pack of pickled mustard tuber strips into cooked noodle. Mix well.
  7. The salt of this dish comes from the pickled mustard tuber. It may take 1 or 2 minutes for the salt to distribute evenly in the mixture. Add salt or garlic salt if needed.
  8. Noodle is done. Serve and enjoy the noodle!
