Chipotle Chicken Wrap

What to prepare for kids' lunch is a contant challenge for parents with school kids. Here is one idea. I like the uncooked whole wheat Roti-Chapati, as whole wheat is healthy. Kids actually like the uncooked flour tortilla better, but it's made with white flour. You can buy either one at Costco in SF Bayarea.

  • Uncooked whole wheat Roti-Chapati or uncooked flour tortilla            2
  • Ham or turkey or floavored roast chicken breast cut in slices             1 cup
  • Sliced cheese of your choice.                                                               2 slices
  • Green leave lettuce or iceberg lettuce                                                  2 leaves
  • Mayonnaise                                                                                           some
  • Mustard souce                                                                                       sone
  • toothpicks                                                                                               4
Procedure: 
  1. Wash 2 large leaves or how ever many of lettuce that you want to put in the wrap. Put aside to dry.
  2. Get cheese and ham or sliced flavored roast chicken ready. This recipe used turkey ham and sliced roasted Chipotole chicken breast.
  3. Cook 1 piece of Roti-Chapati or tortilla on non-stick pan over medium heat for 2-3 minutes or until it changes color. No oil is needed, which delights me.
  4. Repeat step#1 and cook another piece if you are making two wraps.
  5. Put 1 slice of cheese on the cooked roti or tortilla. I spread a thin layer of mayonnaise on the dried lettuce leave, as requested by the kid, put on top of the cheese. On top of the lettuce I put either ham or sliced chicken. Squeeze some mustard on on ham or chicken, again requested by the kid.
  6. You want to wrap the lettuce around the ham or chicken then wrap the roti or tortilla around lettuce so the bread doesn't get soaked in mustard souce. Therefore ideally a slightly larger lettuce leave is better. Use two toothpicks to fasten the wrap.
  7. Repeat steps #6 and #7 to make another wrap.
  8. Put both wraps in a regtangular box and that's your child's lunch!
